Tilapia is the common name for nearly a hundred species of cichlid fish from the tilapiine cichlid tribe. Tilapia are mainly freshwater fish inhabiting shallow streams, ponds, rivers and lakes and less commonly found living in brackish water. Tilapia typically have laterally compressed, deep bodies. Like other cichlids, their lower pharyngeal bones are fused into a single tooth-bearing structure. Tilapia is a sustainable farm-raised product and have many varieties. The approved market name for all varieties is ‘Tilapia’, and the three primary species in the marketplace are: Nile or Black tilapia (Oreochromis niloticus), Blue tilapia (O. aureus), and Mozambique or red tilapia (O. mossambicus). Species originally from Africa have been widely introduced and have become economically important as food fish in many countries China, the Philippines, Taiwan, Indonesia and Thailand are the leading suppliers. Tilapia are herbivorous fish that feed on algae, there is no need for feeds produced from wild caught fish. Tilapia is popular because it is a mild flavoured, white-fleshed fish that is available throughout the year at a competitive price. The most popular product form is skinless and boneless fillets ranging in size from 3 to 9 ounces (5 to 7 ounce fillets are the most common). Tilapia has a low to moderate fat content, and is a rich source of high quality protein. Processed tilapia is available (fresh or frozen) as gutted, headed and gutted, skin-on fillets and skinless, boneless fillets (ranging in size from 3 to 9 ounces but 5 to 7 is more common).
